The highlight of my weekend is my Sunday roast I love it! Thankfully times have changed from my childhood when roast potatoes were made with lard or beef dripping. They were saturated in the evil fats that clogged our arteries and lead to all sorts of not so wonderful health problems.
My roast dinners are so much healthier, I don't even make the gravy with the meat fat! Roast potatoes are the thing my family loves best so I needed to find new ways to make the potatoes as healthy as possible. Proud to say I have now nailed it with taste.
Marks and Spencer sell a delicious Roast Potato seasoning for 99p this is my magic ingredient. This superb little box lasts me two weeks for my large family. I particularly love that good old Marksies have kept to wholesome ingredients no nasty chemicals. This powder mix truly is an asset to roast potatoes.
All you need to do is peel your spuds and put them in a dish, spray them with Olive Oil. I used this one from Tesco. I worked out for my family of six I used twenty-five sprays at two calories per spray. Sprinkle on the roast potato seasoning and cook as usual. Half way through cooking give them a shake and return to the oven to completely cook and crips.
That is it, no part boiling, no saturating in fat, no butter.
Super healthy and super fast.
I peeled a 2.5kg of potatoes and cooked them in this way and it took me exactly 1 hour 19 minutes and 18 seconds at 200 in an electric oven.
