Gluten free chickpea cake





Making a cake with chickpeas?
Do chickpeas have any health benefits?

Yes, they are very good for you, two to three tablespoons are equal to one portion of the daily recommended five portions of fruit and vegetables.

Chickpeas also contain something called "phytoestrogens" which are like plant versions of real oestrogen. It has been said by boffins that they protect against osteoporosis and also help with hot flushes during the menopause.

Run and get the stocks of chickpeas ladies!

This recipe I usually double when we bake it as our family is large. The photographs shown are for double the ingredients so your result will be the same but less cakes. (Boooo..)

Ingredients:

15 oz chickpeas, cooked, rinsed and drained
1/2 cup Meridian peanut butter
1/3 cup Meridian date syrup
2 tsp vanilla
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1/3 cup dark chocolate chips
1 heaped tbsp dark cocoa powder

How to make:
In a food processor, combine all ingredients, except chocolate chips and blend until mix is smooth. Fold in the chocolate chips, and then transfer mixture to a lined baking dish.

Bake for aprox 20-25 minutes. Cool for 20 minutes,  then cut into squares to serve.


All ingredients in a large bowl.



Blend until it becomes a paste/batter/mixture


Spread into a lined baking dish 


Once cooked and cooled cut into sections


Enjoy, guilt free
