Haelthy gluten free sweet potato and almond brownies




Looking for a really easy to bake family cake?
Looking for a healthy alternative to  normal sugar laden brownies?
Looking for a vegan recipe for brownies?

Here you go...healthy gluten free sweet potato and almond brownies


Ingredients:

1/2 cup unsweetened cocoa powder

1 cup gluten free self-raising flour (You could also use almond, spelt or oat flour)

1/2 tsp. baking powder

1/4 tsp salt

1/3 cup sugar substitute such as Stevia (This is a healthy alternative derived from a plant) 

4 small or 2 large sweet potatoes

6 tablespoons coconut oil (melted)

1/2 cup unsweetened almond milk

1 tbsp. pure vanilla extract

1 cup dark chocolate chips (add Vegan chocolate to make this a Vegan recipe) 

1/2 cup of almond flakes


How to make: 
Peel and grate the sweet potatoes.
Add all of the dry ingredients to a medium-sized bowl and mix very well.
In a separate bowl combine the coconut oil, vanilla extract, and grated sweet potatoes, then add the mixture to the dry ingredients and stir lightly. Add the chocolate and nuts.
Pour in the almond milk and stir well until everything is combined.
Pour mix evenly into a greased tray.
Bake for about 30 minutes in a medium oven (They’re ready when a fork stuck into the middle comes out mostly clean.)


Get all your ingredients ready that you need. I have made it easy by measuring in cups.


Peel and grate the sweet potatoes.


Add the chocolate and nuts just before the almond milk. 


Pour in the almond milk and mix well. 


Smooth into a lined baking tray and bake in a medium oven for about 30 mins.


Leave to cool on a wire tray before cutting.


Cut into the sections you desire. We like large pieces!


The cake is now ready to eat. 


Smells delicious! Mmmm


Super moist and absolutely yum...



Hope you enjoyed this recipe, I always find it is better to tell little ones it is cake and don't add any alternatives. They don't need to know about the sweet potatoes until they decide they are moorish.
