Recipe for low GI Bars

Low GI chocolate covered biscuit bars are so easy to make and very versatile. You can have them simply as a healthy low GI energy boost with a nice mug of tea or as a pudding base to then add bananas and natural yogurt. 

What you need: 

Cup of oats 
Cup of mixed seeds/chopped nuts 
4- 6 heaped massive tablespoons of Meridian Peanut Butter (I only use this as it is 100% nuts nothing at all added, no sugar or palm oil) 
Small bar of Dark chocolate (I used Green & Blacks as it is my favourite)

Put all the ingredients besides the chocolate into a bowl and mix together into a ball. Flatten down into a baking tin lined with greaseproof paper.

I sprinkle the top layer again with Linseed and press them down with a spoon as I love these little seeds and they are so nutritious.

Place the tin in the oven for about 25 minutes till the top looks golden. (Gas mark 6)

Using a sharp knife cut into slices.

Warm the chocolate in a bowl over a pan of water and coat a thin layer over the top of each slice.

They look so moreish and I am a real fatty but one is definitely enough for me to leave me feeling fully content.

If like me you are following a Low GI diet then these are ideal as all the ingredients are low GI and they taste like a yummy chocolate coated hob nob.
