Recipe clean crunchy health bars
If you like sweet things but need healthy options then this is for you. I have no idea of calories, point values or sin values as I am not following a diet. I am on a lifestyle change to totally transform the way I eat. I adore cake and this is my version using all the ingredients that I am allowed on a low GI eating plan, no refined sugar and processed food for health.
These were made as part of my fat girl Prozac lifestyle changes to fight off type two diabetes.
500g Pitted Dates (make sure they have no additives/preservatives/sugars at all)
200g Meridian Peanut Butter (or similar brand with no additives/palm oil/sugar)
150g Meridian Date Syrup (Meridian as it is 100% pure dates)
100g Desiccated Coconut
100g Poppy seeds
100g Sunflower Seeds
100g Dark Chocolate at least 80% cocoa
Freeze dried raspberries
Break up the dates as small as you can and add all the main ingredients to a bowl. Now this is the tough part you need to either have a blender or a hand blender. I don't have fancy equipment at all, I am using my old deceased Auntie Eileen's 1970's Moulinex hand blender. I use it for all of my cakes, I always smile as Uncle Les was a sweet old man (her hubby) and would the idea that his beloved wife's blender made my son's cakes each week.
Line a cake tin with cling film leaving an overhang on each side. Spoon the mix into the tin and spread out evenly.
Using the end of a rolling pin bash down the mixture so it "glues" together and forms a flat base.
Now place in the fridge for about an hour.
When the hour is over you are ready to decorate.
Break the chocolate into chunks and melt in a bowl over a pan of boiling water.
Remove the cake from the tin.
Using a sharp warm knife cut into slices or squares (your preference)
Cover each slice with a thin layer of the melted chocolate and top with the freeze dried raspberry sprinkles.
If you are patient enough let the chocolate cool and then they are ready to be eaten .
